Fermented in two neutral barriques for 10 months w a blend of pediococcus, lactobacillus, brettanomyces and saccharomyces. This is a 50 50 blend of both those barrels. Packaged on 27th March 2023 and bottle keg conditioned for 3 months. Dark cherry, cola and mandarin skin sing on the nose. The palate is light but it carries a gorgeous depth and richness with it.
