It can be used to make edible gems, blown sugar, pulled sugar and can be used as a reduced calorie sugar substitude in baking. Gel colour can easily be added to make coloured candy, otherwise the crystal will harden clear. These Isomalt Crystals have a high resistance to humity and will not crystalise.
